Sausage and Peppers

1/2 tbsp olive oil
1 yellow onion, sliced
1/2 tbsp kosher salt
1/2 tsp fennel seed
1 tsp red pepper flakes
3 sprigs thyme
1 red pepper, sliced
1 green pepper, sliced
1/2 bottle beer (i.e. Sam Adams lager and any thing you have)
1 tbsp Worcestershire sauce
2-4 Italian chicken sausage
1 baguette, cut into 4 pieces for sausages
1. Heat oil over medium heat in large pot. Add onions, salt, red pepper flakes, fennel and thyme. Cook over medium-low heat for 10-12 min until onions release some fluid
2. Add peppers and cook for 5 min. Then add beer and Worcestershire sauce. Bring to a boil.
3. Preheat broiler (or grill). Add sausage to pot.  Cover and cook for 5 min. Prick skin a few times and flip over. Cover and cook for 5 min.
4. Remove sausage and broil (or grill)  for 2-3 min per side or until brown. Meanwhile let pot boil to reduce liquid.
5. Serve on bread with spicy brown mustard.
