Smoky Red Lentil Soup

1 tbsp olive oil
1 onion, diced
2 garlic cloves, diced
1 tsp turmeric
1 tsp kosher salt
1 tsp regular paprika
1/2 tsp smoked paprika
1/2 tsp hot paprika or crushed red pepper
1 cup red lentils
4 cups water (or vegetable/chicken stock)

1. Heat oil in heavy pot. Saute onion and garlic until onion is soft, about 5 min. Add spices and saute until fragrant, about 30 sec.

2. Add lentils and liquid and cook for 20-30. Then blend with immersion blender until smooth off heat.
